Last fall when we were out on the Quilt Garden Tour in Amish Country, we stopped at Das Dutchman Essenhaus and Grandma bought the girls these adorable cookies:
I thought they would be easy to make, but it's taken me a whole year to do so... not that they are hard, but it's taken that long for me to get around to it!
The girls LOVED them. Miranda came into the kitchen while I was making them, pulled up a chair and said, 'Oh! Cookie Monster! CUTE!" Megan and Zoë also thought they were pretty cool. They are chocolate-chocolate chip cookies with buttercream frosting with almond flavor with "chocolate chips for the pupils" as Zoë informed me.
Super easy to make- just use your favorite chocolate-chip cookie recipe. Once the cookies are completely cooled, cut them in half. Place the cut ends together, one cookie stacked on the other. Hold it open on the uncut side just a little bit. Using a #12 round tip, pipe the frosting allowing it to build up to make an eyeball. Repeat for second eyeball. Then gently push the pointy side of the chocolate chip into the center of the frosting. Viola!
Oh, and I had to laugh that Miranda ate the eyeballs but left the cookies...

You continue to amaze me, Nadine. Is there anything that you can't do??? You are incredible! Hope you are feeling good. I know life is quite busy for you with 4 beautiful girls!!
