One of the ladies I visit teach turned 89 on Monday. I wanted to do something for her, and I wanted to practice my cake decorating, so I decided to make her a small, six-inch, round cake. It was made using a recipe from my "Cake Mix Doctor" recipe book. I highly recommend getting this book- it has amazing recipes that make ordinary (sometimes not-so-great) cake mixes into YUMMY concoctions!
Anyway, I made a dark chocolate- chocolate chip mix, and had extra batter left over. So, I made two little bundt pan cakes, and then a few mini cupcakes, and with still a little left over, I microwaved the remainder. Yes, you CAN microwave cake mix! Whodda thunk? Just fill a plastic cereal bowl with batter and microwave between 90-120 seconds (turning periodically if your microwave doesn't have a turntable in it). The microwaved cakes turn out VERY moist, but are just as yummy!
So, I decorated my VTee's cake. I used the wrong tip, and the purple wasn't as rich as I like it, and the frosting could've been a little more stiff, but I still think it turned out rather well:
With the two mini bundt cakes, I cut off the rounded tops, put some frosting on the cut side of one, and placed the cut side of the other on top. Then I slathered it with orange frosting. I might try fondant next time; the bundt pans had cool patterns on it that would've looked groovy (forgive the pun) on the pumpkin cake. Also, I thought about using melted chocolate chips for decorating the face, or even "carving" out the face, but opted for the already made yellow frosting. I gave this little (it was only about 5 inches tall) cake to another sister that I visit teach.
It was a LOT of fun! I hope that my VTee's were able to enjoy eating the cake as much as I enjoyed making them.
Oh, of note, Miranda was VERY disappointed that she didn't get "Happy Birthday" (her way of saying cake), and she CRIED when we left the first cake behind with "the grandma". Poor thing! Maybe I'll microwave and decorate her a cake...

Okay, so you and Shanda are amazing at cake making!!! Such great talent! I really should have taken the opportunity to learn from you both!
